Baked Potatoe Soup

2/3 cup margarine or butter
2/3 cup flour
7 cups milk
4 medium potatoes----baked, COOLED, peeled and cubed
4 green onions chopped
l lb. bacon
1 1/4 cups shredded cheddar cheese
1 cup sour cream
1 t. salt or salt to taste I use a little garlic salt also
1 t. pepper

Bake potatoes and let them cool----cool the potatoes all the way or else they may turn to mush---then peel and cube cooled potatoes. Cook bacon until crisp. Drain, crumble bacon and set aside. You can also slice bacon first then brown until crisp.

In a large pot, melt the margarine or butter over medium heat. Whisk in flour until smooth. Gradually stir in the milk, whisking constantly until thickened. Stir in potatoes and onion. Bring to a boil, stirring frequently. Reduce heat and simmer for 10 min. Mix in bacon, cheese, sour cream, salt and pepper. Continue cooking stirring frequently until cheese is melted. Can be made ahead and reheated. Enjoy!!!!

Mom's Invention

4 or 5 boneless chicken breastor pork chops
1 cup ranch dressing
1 cup seasoned bread crumbs
1cup wheat flour

Dip boneless chicken breast or chops in Ranch dressing and then in flour mixed with bread crumbs. Fry in olive oil.

Easy Taco Pie

1 can Crecent Rolls
1 lb. grown beef
1 80z. sour cream
1 cup shredded mild cheddar
1 pkg. toco seasoning
12 pkg water
1/2 bag tortilla chips (crushed )

Spray pie pan with cooking spray, line with crecent rolls. Crush chips and put half on the crecent rolls. Brown ground beef and drain. Add seasoning, simmer for 10 min. ( I added onion and green pepper) put meat mixture in pie pan. Top with sour cream and chips and cheese.
Bake for 25 min. at 350. Serve with lettuce and tomato.

Cheesy Chilada Casserole

1 lb ground beef
1/2 small chopped onion
1 green pepper, diced (opt)
1 clove garlic or 1/4 tsp garlic powder
1 16 oz can pinto beans drained and smashed
1 15 oz can tomatoe sauce
1 C salsa
1 tsp cumin
1/2 tsp salt
12 Corn Tortillas
2 C shredded cheese (monterey jack mix)

Brown ground beef with gr pepper, onion and garlic. Add mashed beans, tomatoe sauce, salsa, cumin, and salt. Simmer 15 minutes. Spoon just enough of mixture into 9x13 pan to cover the bottom. Top with 6 tortillas. Top with 1/2 of remaining mixture. Sprinkle with 1/2 of the cheese. Cover w/ remaining tortillas, then remaining meat. Cover tightly with foil and bake at 350 degrees for 20 minutes.
Remove foil and top with remaining cheese and bake for 5 more minutes.
Serve individual servings topped with lettuce, sour cream, tomatoes, etc.

Apple Snicker Salad

4-5 Granny Smith Apples, Diced(do not peel)
3/4 C Brown Sugar
4 oz. cream cheese, softened
1 tsp vanilla
1 Large container Cool Whip
4-5 Snickers Bars, chopped

Mix brown sugar, cream cheese, and vanilla in a large bowl. Fold in Cool Whip. Mix apples and snickers in right before serving so that salad doesn't get runny. SOOOOO GOOD!!!

Baked Tuna Casserole

You may want to double this

6 oz package medium egg noodles, boiled and drained
mix in 1 can tuna ( white albacore is best ), drained
1/2 cup mayoniase
1/2 Cup chopped celery, or cooked peas
1/3 cup chopped onion, or 1/4 tsp onion salt

In a saucepan heat together:
1 can crm of mushroom soup
1/2 milk, and 1 cup grated cheddar

Mix all together, place in 8 by 8 pan or 1 1/2 qt pan
Sprinkle crushed potato chips on top
Bake at 425 for 20 - 25 minutes

Caramel Frosted PUMPKIN Cookies!!

COOKIES

2 Cups shortening
2 Cups sugar - cream together

29 0z can pumpkin
2 eggs
2 tsp. vanilla - add and mix

4 cups flour
2 tsp. baking soda
2 tsp. baking powder
1 tsp. salt
2 tsp cinnamon - add and mix well

Drop by large tablespoonfuls on cookie sheet
Bake at 350 for 12-14 minutes

FROSTING

Start preparing before the cookies!
Combine in saucepan:
12 Tbsp butter
1 cup milk
2 cups brown sugar
Boil for 2 minutes, when cool add remaining ingred.
6 plus cups powdered sugar
1 Tbsp vanilla
Mix well, then refrigerate to stiffen for about 2 hours

Makes more frosting than needed, if you only like a thin layer,
you may want to cut it in half
